Apple Raisin Muffins from the Food Network
With 2 hours to spare on Saturday, I chomped into a new recipe that dropped dried apples into cinnamon raisin muffins. To spice things up, I used New Zealand dried sweet apples, oats, and an extra dash of cinnamon. Sour cream and a single egg added a slight tenderness that held the otherwise crumbly dough together. The molasses-like tinge of the raisins heavily complemented the sweet chewy apples and woodsy walnut pieces, while the oats created the illusion of a wholesome goodness!
